WHY SOPs MATTER - PECTIN

With its clean bite and vegan appeal, pectin has quickly become a consumer favorite in the rapidly expanding global gummy market. Operationally, it offers powerful advantages such as superior heat and mold resistance, properties not readily found in traditional gelatins. Despite these benefits, pectin is uniquely PH and ion sensitive, which can be frustrating for those unfamiliar with its strict operational requirements.
